Kimchi day;🥬🌶

To celebrate Kimchi Day on November 22, I conducted three Kimchi workshops in various locations across Belgium.

Kimchi Day, celebrated annually, pays tribute to Korea's iconic fermented dish, which has been a cornerstone of Korean cuisine and culture for centuries.
The date symbolizes the 11 key ingredients of Kimchi and its 22 beneficial nutrients. Established in South Korea in 2020, this special day highlights the cultural and health benefits of Kimchi, underscoring its status as a global superfood rich in probiotics, vitamins, and antioxidants.

Interest in Kimchi continues to grow in Belgium, with more people not only intrigued by its health benefits but also eager to learn the art of making it at home.
During the workshops, participants were captivated by the unique fermentation process of kimchi, especially in comparison to other fermented foods. Their enthusiasm was evident as they fully engaged themselves in making their own kimchi, relishing the hands-on experience and discovering the tradition behind it.

The joy of tasting their freshly made kimchi added a lively and engaging energy to the sessions. Although preparing for a kimchi workshop is more labor-intensive than other classes, it is always worth the effort.

Last night, we wrapped up the final workshop by savoring a warm and flavorful Kimchi stew with pork ribs, slow-braised for over an hour using one-year-old kimchi—a perfect and delicious way to conclude the event.

11월 22일 김치의 날을 맞아 3번의 김치워크숍을 했어요.. 김치는 벨기에에서도 인기가 많아서 워크숍을 열때마다 하루만에 매진이 되는 워크샵이 되었답니다.. 질문들도 많으시고 너무 열심히 김치를 담그시고.. 워크샵 후 각자 다시 집에서 실습한 사진을 보내주실때마다 너무 뿌듯하답니다.🥰

강정; Gangjeong is a versatile Korean dish that has roots both in traditional desserts and savory snacks. In general Gsngjeong refers to foods that are coated in a batter or sauce, often fried, sweetened and glazed.

Dakgangjeong ( 닭강정) is a popular Korean fried chicken dish. The chicken is usually cut into bite sized pieces, lightly battered, and fried until crispy. It is then tossed in a sticky, sweet - and- spicy sauce. It has an addictive balance of sweet, spicy, and savory flavors with crispy, glossy finish.

Eggplant and mushrooms, especially varieties like oyster or shiitake, serves as excellent substitute for chicken due to their meaty textures and ability to absorb rich flavors from sauces.

L'air du Temps and Jeongkwan seunim collaboration event ;
On September 21, an extraordinary collaboration took place between chef Sanghoon at L'air du temps @san_degeimbre_chef and Jeongkwan seunim @jeongkwanseunim. In a stunning setting where the chef grows his own vegetables ( it is a vast farm with a variety of vegetables, herbs, and even Korean produce), guests were treated to eight incredible starters and refreshing non-alcoholic drinks made by the chef Sanghoon and had the opportunity to attend a vegan Kimchi workshop and to enjoy the mesmerizing dishes prepared by Jeongkwan seunim, all on a sunny day in this beautiful location. @airdutemps_belgium
The staff from both teams, coming from two - different continents ( Belgium-Korea), worked seamlessly together to create a truly unforgettable experience.
From the moment we entered the domain until we left, we felt the genuine warmth and hospitality from the team at L'air du temps, making our stay truly exceptional. I can't express enough how much I learned and enjoyed from this event.

지난 21일에는 벨기에 미슐랭 2 스타 셰프님인 상훈셰프님과 정관스님의 콜라보 행사가 있었어요..전 통역과 행사보조를 맡았구요.. 벨기에 브뤼셀에서 1시간정도 운전해 가면 큰 대지에 레스토랑과 농장, b&b 가 같이 있는 L'air du temps 이라는 곳이 나와요.. 레스토랑에 사용하는 신선한 채소들이 이 농장에서 길러지고 스님은 이곳에서 자란 배추와 야채들을 가지고 김치 워크샵도 하시고 발우공양도 준비해 주셨어요.. 상훈셰프의 음식철학과 정관스님의 음식철학이 만난 정말 잊지 못할 행사였답니다. 저희는 행사 이틀전에 가서 준비를 했는데요.. 아침 점심 저녁 먹은 음식이야 말할것도 없고 스텝분들이 너무 잘 해주셔서 3일의 그곳에서의 생활은 오히려 힐링이였던것 같아요🥰

On September 19, the Korean Cultural Center in Brussels @koreanculturebrussels hosted a special event on Korean Jang and temple Kimchi making with Jeongkwan Seunim. @jeongkwanseunim
She explained the process of making Korean soybean paste ( doenjang) and temple Kimchi, offering an enlightening and educational experience. Assisting and helping her with the preparation, alongside an incredible team, @yejina_jeong @happyjinsmeal @momi_154 made all the hard work enjoyable and fun for me. The result of the temple Kimchi was incredibly refreshing, leaving a clean, crisp finish on the palate
